To me nothing says summer like s’mores. It’s one of those combinations that are classic: graham cracker, marshmallow and chocolate…mmmmm.
I have so many memories of camping with my grandma and having s’mores over a camp fire or after a family cookout roasting the marshmallows over the glowing coals on the grill.
I love to find new ways to combine this threesome of deliciousness. One way that I have done this is to pair them with brownies. Gooey brownies with a layer of graham crackers on the bottom and topped with toasted marshmallows and chocolate chips. I know, I know, crazy good!
This is a simple recipe because it starts with a brownie mix. I must admit I am a brownie mix lover. There is just something about the way they turn out that is so good. I have found a homemade recipe that is a pretty good copycat, but that’s for another day. Today, a brownie mix is just fine. Dress it up a bit with those old campfire favorites and you’ve got a dessert for your next summer picnic.
9 whole graham crackers, divided
1 9×13 brownie mix (I used a fudge one, but any one will work)
2/3 cup oil
1/4 cup water
2 cups mini marshmallows
1 cup chocolate chips
Preheat oven to 350 degrees. Line a metal 9×13 pan with aluminum foil, leaving enough to hang over the edges. Coat with cooking spray.
Break graham crackers in half and line the bottom of the pan with a single layer. Some pieces may need to be broken smaller to cover the whole pan. It does not have to be perfect; just mostly covered. Crush the rest of the crackers into crumbs and set aside.
Combine brownie mix, oil, water and eggs. Mix well. Pour over graham crackers and bake for 25-30 minutes. Remove from oven.
Sprinkle marshmallows and reserved crackers. Broil for 30 to 45 seconds or until marshmallows are golden brown. Watch carefully! They will burn quickly. Sprinkle immediately with chocolate chips.
Cool for at least one hour. Remove from pan (with foil) and cut into squares.
