Well, happy Memorial day weekend y’all!
My long weekend will start officially in about an hour (that’s when Ian gets off of work). I am excited to have a few days of being all together as our lil’ family. We have some things planned, although I’m sure we will be missing the Berkshires a lot this weekend. This will be the first year in a while that Ian will not put on his military blues and march in the Lee MA parade and were a little too far away to make the Lee VFW cookout. But new places means new traditions and that’s what this year has been. New experiences and new ways of doing things.
I have been on a quick bread kick lately. In the past week I have made whole wheat banana bread, chocolate zucchini bread and yesterday I tried out a bread that I thought was fitting for the weekend. It is Whole Wheat Banana Berry Bread. The red and blue berries make it a festive and delicious bread. I made it with 100% whole wheat flour and only sweetened it with honey, although the bananas and berries add sweetness too. It’s still not overly sweet, so if you like your quick breads to be sweeter, maybe up the sugar a little.
Seth saw the blueberries and immediately got excited about “chocolate bread!” Oops. I let him have a slice last night as a treat and allowed him discover on his own that it was not exactly what he was expecting. I was a little nervous, you mom’s of toddlers out there know how sometimes a disappointment can fair with these little dictator-want-a-be’s. I was pleased to see him enjoy and devour the slice and he did not even seem to mind the lack of vitamin CH (that’s chocolate). He even had another slice for breakfast this morning. Score!

Whole Wheat Banana Berry Bread
- 2 cups whole wheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tbsp butter, melted and cooled slightly
- 1 large egg, room temperature
- 1 ½ tsp vanilla extract
- 2 medium ripe bananas
- ¼ cup plain yogurt
- 3 tbsp honey
- ¼ cup milk, I used almond, but any kind would work
- ½ cup diced fresh strawberries (about 4 medium-large)
- ½ cup fresh blueberries
Preheat oven to 350 degrees and lightly grease a loaf pan.
Whisk together flour, baking powder and soda and salt. In a separate bowl mash bananas, whisk in melted and cooled butter, egg and vanilla. Add yogurt and honey, mix until no large clumps remain and well blended. Beginning with flour mixture, alternate adding the dry ingredient and milk, ending with dry. Do not over mix. Gently fold in berries.
Pour batter into prepared pan and bake for 40-50 minutes. Cool for 10 minutes in pan. Remove from pan and cool completely.
